All North Carolina BBQ is very slow-cooked pork, generally smoked for a minimum of 16-18 hours at a very low temperature. By slow smoking at a low temperature, the meat is allowed to age without drying out. Almost never is any kind of sauce applied during smoking. Sometimes, a touch of sauce (vinegar-based with a few spices) is added as a hydration aid to prevent excess binding of the outside part of the meat, but not as a flavoring agent.

Wish they were open year round! Best ribs that completely fall off the bone just by picking them up. The baked beans are BEYOND Award Winning!!!!! I even go so far as to tell my Mother that they are BETTER THAN MY MOMS HOMEMADE!!!!!
Hidden gem! Have had their catering at a couple events and it was phenomenal. Found out they have a store front and had to stop and get more. It's a little hidden from banksville road but worth it. The ribs are out of this world and the brisket is to die for. Must try.
Always top notch bbq, brisket is awesome, along with the ribs, St Louis the crown jewel. All of the sides are good, but the big surprise was the brisket chili. Not always on the menu. Fantastic! Big chunks of brisket, tomato, peppers, and no beans! Spicy but not too hot. Award winning in my book.
What can sooth the soul after a long day of grieving and burying a love one? Service and foot by PBC. They knew the room and their food matched. Everyone raved about the selections. They offered plenty of take home as if they were family...
